Headphones impedance help - i have a tascam portastudio 788 what impedance should the headphones that i'm going to get be?

You will be fine with any of the ''standard'' studio headphones like e.G. Sennys hd280, akg 240/271 or beyer dt770 some headphones have a high impedance of 600 ohms, but you can use 'em as well, pretty much any headphone amp...

Got a tascam 788 8 track, no cd burner but it has a scsi port. It'll record 6 tracks at a time (4 mono and 1 stereo). I think i've got all the instructions but no box. I've no idea...

Looking to step forward - with cubase, you can record in a loop, then choose which take to bring to the front. they all just stack up on eachother in the main edit window.

Looking to step forward - 1) generally, yes, but a well-designed internal card will have a respectable level of emi immunity. i wouldn't let internal vs. external weigh too heavily on your decision. 2) cubase can handle all of your editing needs.
